The chorizo is made from lean pork which is minced and seasoned with paprika, spices, garlic and salt then slowly air-cured.

It is spicy and full-flavoured with a nice hint of smoke. Sliced thinly, Chorizo Riojana is a classic for tapas or starters and brilliant too in sandwiches, salads, pasta sauces and on pizza. Add it to other sauces too for a lovely, distinctive Spanish flavour!
